The Stafford Guest Chef
On Saturday 13th July, author and food writer Genevieve Taylor will join The Stafford;’s Culinary Director, Ben Tish for the second Guest Chef event of 2019.
Genevieve and Ben are both passionate about BBQ and have created a stunning, Mediterranean inspired menu to be cooked and served in the The Stafford’s private courtyard.
The afternoon’s grilling starts with a trio of snacks including Mini jerk-spiced plantain, shallot and halloumi kebabs and Baba ganoush with flatbread chips from Genevieve, alongside Ben’s Chorizo and piquillo pepper skewers. Main courses feature Ben’s Slow cooked lamb shoulder served alongside Genevieve’s Cauliflower with lemon, oregano and feta and Aubergine rolls with walnuts, herbs and pomegranate seeds. Seafood lovers are in for a real treat with Ben’s Charcoal grilled fennel seed sardines with plates of Genevieve’s Peppers with olives, chickpeas and harissa and Grilled courgettes, lemon and Aleppo pepper. For veggies there will also be a fresh and vibrant Butternut squash and feta with smoked beetroot cubes and fennel chilli croutons. All dishes will be cooked over open fire, including a sweet dish of Grilled white peaches with thyme and mascarpone ice cream to round-off the afternoon.
