We are proud to welcome one of Britain’s most distinguished chefs, Michael Caines MBE, to The Stafford London as Culinary Strategist. A true icon of modern British gastronomy, Michael brings with him a new chapter of culinary excellence to the heart of St James’s—where tradition meets innovation.

This collaboration marks Michael’s first-ever venture into the London dining scene and heralds the exciting transformation of The Stafford’s culinary offering. In his role as Culinary Strategist, Michael will oversee all food and beverage operations across the hotel—from our reimagined main restaurant to private dining, events, and beyond.

A New Chapter in British Dining

At the heart of this partnership lies a bold reimagining of our restaurant, The Game Bird. Relaunching in autumn 2025 with a new name, concept, and menu under Michael’s direction, the restaurant will reflect not only his celebrated culinary style but also the unique character and heritage of The Stafford London.

The new dining experience will focus on seasonal British produce, drawing inspiration from land and sea, field and garden. Expect a menu that evolves with the rhythm of nature, crafted with precision and imagination. Signature dishes from Michael’s acclaimed repertoire will appear alongside newly created plates that reflect the energy and diversity of London.

About Michael Caines

Michael Caines MBE is one of the UK’s most celebrated chefs, with a career spanning over three decades. He held two Michelin stars for more than 18 years and is the visionary behind Lympstone Manor, his luxury country house hotel and vineyard on the Devon coast.

Lympstone Manor has earned a Michelin star, two Michelin Keys and five AA Rosettes. It is a proud member of the Relais & Châteaux, with Michael head of the UK and Ireland delegation and on the World Council.

Michael’s influence on modern British cuisine is profound. Beyond his culinary accolades, he is widely respected for mentoring young talent, championing sustainability in hospitality, and crafting experiences that are personal, precise, and full of heart.

Soon, guests will be able to discover both properties through our upcoming ‘City to Coast’ package—a curated journey from London’s historic St James’s to the tranquil shores of the Exe Estuary.
